Make my First Ever Jar of Almond Butter!
After spending some time doing research on how to do it and luckily having a bag of almonds in my pantry…
I discovered…you don’t need anything else to make almond butter other than almonds!
Yes, what a pleasant epiphany!
I can tell you, this is the easiest, no brainer recipe for a delicious jar of nut butter and I promise – you won’t be sweating!
Homemade Roasted Almond Butter
- 2 cups Almonds with Skin On
- 1 tsp good quality Vanilla Extract
- 1 tsp Nutmeg powder
- 2 tsp organic brown sugar
- 1 tsp fine flowing salt
In a large roasting tray lined with parchment paper or baking mat, combine 2 cups of skin-on almonds with salt and nutmeg and roast in a 300° F oven for 15-20 minutes. Your nose is your assessor for roast-readiness and trust me, when its done roasting, your nose will shout for joy!
Once the almonds have cooled down, blitz them in a food processor for 1-2 minutes. They will look coarse but have faith! They are going to be a gooey concoction soon!
Continue blitzing for another 2 minutes and you will see the coarse mess has become a creamy concoction. Stop the processor in between to scrape the sides and bottom so that all the nuts have a chance to be shattered to smithereens. Continue blitzing for another 5 minutes while adding the sugar and vanilla extract. Once they are smooth and creamy, transfer to a tight fitting jar.
Now go ahead and serve your fabulous butter on any carrier of choice – toast, biscuits, bread, pita, veggies, fruits, fish, meats…
